Japanese Hot Cakes

Japanese Hot Cakes or as I like to call them fluffy pancakes just cause they’re cuter are really really easy to whip up. You can prepare the batter the night before and have it for breakfast the next day!

Ingredients:

  • 2 eggs
  • ¾ cup + 1 ½ tbsp milk
  • 1 tsp vanilla extract
  • 1 ²/3 cup of flour – any kind will do
  • 1 ¾ tsp baking powder
  • 3 tbsp + 1 tsp granulated sugar
  • Butter/ Oil for cooking
  • Toppings of your choice eg maple syrup, peanut butter, fruits, nutella etc. (optional)

Steps:

  1. In a large bowl, add the eggs, milk and vanilla extract together
  2. Whisk until foamy
  3. Sift in flour and baking powder
  4. Add in granulated sugar
  5. Mix until incorporated
  6. In a pan, add a dollop of butter or oil and wait til it heats up
  7. Once it’s hot, place a spoonful of batter onto the pan
  8. When the pancake starts showing some bubbles, flip it!
  9. Place it on a plate and add your toppings
